Introducing the Wesson Chopper, the inaugural limited-edition kitchen knife from Wesson Knives.
Designed and crafted in Massachusetts, this distinctive chopper features an original Wesson 140 mm K-tip Kobunka blade, precision laser-cut from repurposed, pre-hardened industrial M2 high-speed steel.
Each blade is individually hand-ground, beveled, shaped, and finished, retaining a dark industrial surface that contrasts beautifully with the exposed steel along its sweeping cutting edge.
The distinctive K-tip design combines a broad, curved cutting edge with an angular tip, offering versatility for slicing, chopping, and precision food preparation.
Number 1 features a dark, ebony-toned octagonal wood handle, giving the knife a striking appearance with traditional Japanese-inspired styling. The commercially manufactured handle was individually fitted and assembled by Wesson Knives.
As part of our first production run, each knife features its own unique characteristics and subtle variations resulting from the hand-finishing process.
